We are home cooks in the United States who believe a great dinner should not need a culinary degree.
The skill-level system
Every recipe is rated Rookie, Sous Chef or Head Chef. Rookie dishes are relaxed and quick. Sous Chef recipes ask for a technique or two. Head Chef projects take time and attention, and they are worth it.
How we test
We cook each recipe at least three times in ordinary American home kitchens with supermarket ingredients. We use US measurements and Fahrenheit temperatures, and we note when a thermometer matters.
What we cook
Brunch, dinner party mains, comfort food, handheld sandwiches and sweets.
